These past 2 weeks have flown by, and we are now at the end of the first part of the Whole 30 reset diet! The past 2 weeks we both found ourselves setting strict schedules for work and working out, which left us less time to prepare different types of meals. We became super-fast at making our staples!!! We usually have a smoothie bowl for breakfast, potatoes/sweet potatoes with veggies and maybe an egg for lunch, or we switch it up and have potatoes with veggies/egg for breakfast and smoothie bowl for lunch. Dinner gets wacky because we workout at 4 and then like to walk after that so we put something small together for dinner and try to keep it mostly veggies! We tried making cauliflower pizza the other day and it turned out pretty good!

Instant Pot Cubed Potatoes!
1. Wash and peel about 4 medium size potatoes
2. Cube them in about 1/2 inch cubes.
3. Cook in the instant pot with just enough water to cover the potatoes on low pressure for 1 minute, sealed. Then release the pressure and transfer into a hot nonstick pan with some ghee or oil.
4. Cook on medium/high heat for about 5 minutes and then flip them around on the pan. Cook for another 5 min and then flip again, and do that until they are browned to your liking!!

Cauliflower Fried Rice with Shrimp!
1. Cut head of cauliflower into small pieces and feed through food processor with the small grater attachment.
2. Lay out on paper towels to dry out and get moisture out by pressing down on the towels.
3. Throw on saute pan with little bit of oil and steam for 5-8 minutes.
4. We threw in fresh bell peppers, onions, garlic, carrots, green onions, and scrambled egg, topped with shrimp!
