The Roller Coaster of 1 Month!!

We hope that sharing our experiences through the 30 days has helped you all to see that it is possible!!!! For both of us, we did not go exactly through all of the emotions according to the Whole 30 plan (https://whole30.com/revised-timeline/), but we did notice some similar things happened to us. 


I was shocked when Alex told me she had dreams about breaking Whole 30!!! This is so real!!! When you are so focused on a goal and continuing to create daily habits, we both then had dreams we broke the 30 days!!!

WHAT WE ATE THIS WEEK

Baked Sweet Potato Cubes/Fries!


1. Set oven to 425-450

2. Rinse and peel 1 sweet potato (this whole sheet pan was 1 potato and will last about 2 normal portions or 4 side portions). 

3. Cut into fries, slices, or cubes and put into a big bowl. Season with EVOO, salt, pepper, garlic powder, cayenne pepper. 

4. Place on sheet pan and put in the oven for about 8-10 minutes, then turn the pan around and/or flip the fries over and put back for another 8-10 minutes. 

Favorite Breakfast/Lunch! 


1. Rinse and peel 3-4 small potatoes (for 2 people)

2. Slice using food processor *we do not recommend slicing by hand, takes way too long!!!

3. Place on skillet pan on medium heat with EVOO and layer potatoes on sprinkling some salt and pepper. 

4. Flip potatoes every 5-6 minutes for about 30 minutes and add salt and pepper again towards the end.

5. Top with eggs your style, avocado, tomato, other veggies you like (onions, mushrooms).
